Chocolate Mud Pie
Yield: 12 servingsCrust
2 cups (4.8 dl) chocolate cookie crumbs4 tablespoons butter
Fudge sauce
5 oz (140 g) semi-sweet chocolate (40-45%)½ cup (1.2 dl) whipping cream
3 tablespoons butter
Filling
4 cups (1 liter) ice cream, softened (coffee or chocolate-flavored)Method
- Combine chocolate cookie crumbs and 4 tablespoons melted butter. Press the mixture into the bottom of a 9 inch (23 cm) spring form tin.
- Break the chocolate into small pieces and melt it with butter over hot water. Mix with whipping cream, and stir until smooth. Chill 10 minutes. Spread 1/2 cup / 1.2 dl sauce on bottom of chocolate cookie crust, and cool in the freezer.
- Spread the softened ice cream over the fudge sauce, and freeze for several hours.
- Heat the remaining sauce over hot water so that it becomes pourable.
- Wrap a hot wet towel around the spring form tin for a few minutes, then remove the sides of the tin.
- Serve the pie with warm fudge sauce.
